My Minestrone Soup

This soup contains large meatballs made with ground turkey, in addition to having black and pinto beans, vegetable broth and vegetable soup mix.
 

Ingredients

  • 1) 1 lb. ground turkey meat
  • 2) 3/4 cup Italian-seasoned fine dry bread crumbs
  • 3) 1 egg, beaten
  • 4) 2 cups Canola Oil
  • 5) 2 can black beans, and 2 cans pinto beans
  • 6) 3 Tablespoons of minced garlic (you can get already-minced garlic in the grocery store)
  • 7) 1 Tablespoon butter.
  • 7) 10 cups of vegetable broth
  • 8) 1 cup Knorr's Vegetable Soup and Dip Mix (You can use any brands vegetable soup and dip mix, I just like Knorr the best)

Method

1) Mix bread crumbs with egg and the turkey meat. Form into 2 inch balls. 2) Put the 2 cups Canola oil into a large skillet. Heat oil and place meatballs carefully into the pan. Cook until a medium brown. Take each ball out and place on a paper towel-lined plate. 3) Melt 1 Tablespoons butter in a 4 Qt stockpot and stir in 3 Tablespoons minced garlic. Saute for 1 minute. Pour in the 10 cups of vegetable broth. Bring to a boil. 4) Put in beans, meatballs, and vegetable soup mix. Lower flame. 5) Let cook for 1 hour, stirring occasionally.
