Orange Duck Spit & Sauce

A crispy rotisserie duck cooked on a grill and served with sweet butter and orange sauce.
 

Ingredients

  • Oranges:
  • 2 whole oranges, washed and cut into quarters, skin on
  • 1/4 cup brandy
  • Duck:
  • 2 cleaned and dressed ducks
  • 1/2 cup salad oil
  • Sauce:
  • 1 cup butter
  • 1 cup orange juice
  • Grated rind of 2 oranges

Method

Soak oranges in brandy for several hours. Stuff ducks with marinated oranges. Brush ducks with oil and barbecue on a rotisserie spit for 1-1 1/2 hours, or until done. In a small sauce pan, combine butter, orange juice and rind. Simmer 15 minutes, stirring occasionally. Remove rind. Serve cooked ducks with orange butter sauce.
