Organic Whole Wheat Banana Bread

Make a healthier banana bread by using organic whole wheat flour, dried cranberries and walnuts.

  • Servings: 10-15

Ingredients:

2 cups Organic Whole Wheat Flour
2 tsp Baking Powder
½ tsp Baking Soda
¼ tsp Ground Cinnamon
½ tsp Salt
3 Large Eggs
3 Large Bananas
1¼ cup Low Fat Milk
½ cup Light Brown Sugar
½ cup Granulated Sugar
1 Tbsp Vanilla Extract
2 Tbsp Butter, melted
1 Tbsp Olive Oil
½ cup Craisins
¼ cup Chopped Walnuts

Directions:

Preheat oven to 325 degrees. Sift flour and combine flour, salt, cinnamon, baking powder, baking soda, and sugar together. Whip eggs, add milk, banana and vanilla extract. Combine dry ingredients with egg mixture, then fold in dry cranberries, walnuts, melted butter and oil. Pour into a loaf pan and top with oatmeal flakes. Place in oven and bake 25-40 minutes. Pierce with toothpick to check for doneness. When finished, allow to cool. When cool, slice and serve.
