Pan Fried Chicken In An Olive and Garlic Sauce Over Wild Rice

Boneless, skinless chicken breasts are seasoned and shallow-fat fried, then mixed with bread crumbs, garlic and olives, and served with wild rice.
 

Ingredients

  • Cooking oil
  • White wine
  • Seasoning salt
  • Sazon Goya (seasoning)
  • Parsley
  • Crushed red pepper flakes
  • 1 cup wild rice
  • 1 cup water
  • 3 boneless skinless chicken breast halves
  • 4 cloves garlic
  • 4 green olives
  • 4 black olives
  • 1 tbsp fine bread crumbs

Method

Heat a small amount of oil in a pan over medium-high heat. Splash wine over chicken on both sides. Very lightly sprinkle seasoning salt on chicken. Season with other dry seasonings until covered on both sides. Add chicken to skillet to cook. Cook wild rice in a separate pan according to package directions. Remove chicken when almost done cooking. Add finely chopped garlic and olives to pan; fry about 30 seconds. Add 1 cup water and 1 tablespoon bread crumbs. Stir and return chicken. Finish cooking chicken. Serve with wild rice.

 

Notes: It's hard to tell how much to season to another person, so try and judge.
