Peach Schnapps Applesauce

Homemade applesauce is a great use of apples that are past their prime. A little peach schnapps adds a nice little kick of flavor.
 

Ingredients

  • 3-4 pounds red and golden delicious apples: peeled, cored, quartered
  • 4 tbsp peach schnapps
  • 2 tbsp salted butter

Method

Place apples and schnapps into a large heavy lidded pot and bring to a boil. Lower heat and simmer 20-30 minutes until apples are soft enough to mash with a potato masher. Mash to the consistency you prefer. Stir in butter to melt then fully incorporate. If you prefer a less chunky applesauce, add 1/2 cup water at the start.

 

Notes: I began making applesauce a few years ago and found it so easy and a very good thing to do with apples that are past their prime. If I am making applesauce to use as a sugar substitute in baked goods, I don't add butter though it won't hurt anything if it's there. Very good in brownies and sweet quick breads. A food mill can be used to mash the apples, but in that case I would not remove the skins before cooking. Leaving the red skins on will generally give the applesauce a pinker tone. I usually toss a few peels into the pot at the start of cooking and fish them out before mashing.
