Combine jalapeno, cilantro, garlic, and chopped ginger; add ground turkey. Use your hands to "knead" it all together. Form into two patties, about 4-inches wide and 1/2-inch thick. Heat 1 tsp of olive oil in a skillet. Place the patties in the pan. Cook over medium heat (to keep them moist) until done, about 15 to 20 minutes. Flip them every five minutes or so, and make sure they do not burn. Brush cut surfaces of buns with remaining olive oil; sprinkle with the ground ginger and the 1/4 cup Gruyere. Bake at 300 degrees about 5 minutes, until toasted. Once buns are toasted, place mixed greens on bun bottoms and sprinkle a little more grated Gruyere on the greens. Place burger on top and drizzle with lime juice. Add bun tops.
This burger is fresh, spicy, and surprisingly moist, where turkey burgers are often dry and dull.
