Pineapple Salsa

If you like some heat in your salsas, stir in 1 teaspoon chopped seeded fresh jalapeno chili pepper.
 

Ingredients

  • 1 large pineapple, peeled, cored, and cut up
  • 1/3 cup chopped fresh cilantro
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 2-inch-long piece fresh ginger, peeled and finely chopped
  • 1/2 tsp. cayenne pepper

Method

Combine pineapple, cilantro, sugar, salt, ginger, and cayenne pepper. Cover and chill for 1 to 2 hours.

 

Notes: Great by itself or very good over grilled tuna, pork or chicken!
