Protein Salad

This salad contains some chopped chicken, cheddar cheese and hard cooked eggs for protein, plus plenty of vegetables--lettuce, broccoli, bell peppers, and carrots--with salad dressing and seasonings.
Ingredients
- 1/2 cup of shredded cheddar cheese
- 2 hard cooked eggs, mashed or chopped
- 1/2 cup of chicken cut in small pieces
- 6 Cups of chopped iceberg lettuce
- 1/2 cup of freshly chopped broccoli
- Red and green bell peppers cut in small pieces
- Chopped carrots
- 1/2 cup of Miracle Whip Light
- Salt, pepper, fine herbs and spices to taste
- Parsley

Method
In a large bowl mix all ingredients together including the mayo; top with fresh parsley. Serve immediately.
Notes: You can serve this as a side dish for 4, but it's perfect for a main meal for 2 or 3. Be sure that all veggies are fresh and crispy.
