Roasted Beet, Smashed Avocado & Feta Sandwich

Sweet roasted beets, tangy mashed avocado and slightly salty feta cheese mingle on toasted whole grain bread for a delicious healthy sandwich. It's the perfect recipe for meatless Monday or any other day of the week.

Ingredients:

1 Avocado, pitted, peeled
2 tsp Fresh Lime Juice
2 Tbsp Light Mayonnaise
1 Tbsp Chopped Fresh Oregano
4 slices Whole Wheat Bread, toasted
2 Leaves Crisp Lettuce
4 Beets, roasted, peeled, cooled, sliced*
2 Tbsp Crumbled Blue Cheese

Directions:

In a bowl, combine avocado and lime juice; smash with a fork leaving the avocado a bit chunky. Add mayonnaise and oregano; blend well. Spread a generous portion of smashed avocado mixture over 1 side of each bread slice. Layer lettuce, beets and cheese atop avocado on two of the bread slices. Cover with other bread slices, avocado side down. Makes 2 sandwiches.

Helpful Tips:

*To roast beets: rinse and cut off tops and place on a square of heavy duty aluminum foil. Drizzle with a little olive oil and sprinkle with a pinch of salt and black pepper. Wrap foil, enclosing beets inside; roast at 400F for 45 minutes or until tender.
