Roasted Chicken with Garlic and Rosemary

A special, healthy meal for family or friends--roasted chicken in a garlic, mustard and orange sauce.
Ingredients
- 1 roasting chicken, butterflied
- 2 heads garlic
- 1 sprig fresh rosemary, chopped
- 2 tsp seasoned salt
- 2 tsp fresh ground pepper
- 2 tbsp mustard
- 2 tbsp olive oil
- 1/2 cup fresh orange juice

Method
Wash and dry chicken. Place chicken in baking pan and rub with mustard and olive oil. Sprinkle top of chicken with 1/2 of seasoning salt and pepper. Flip over so the breast is laying in the baking pan, and rub with remaining olive oil and mustard then sprinkle with remaining salt and pepper. Take garlic and separate cloves. Sprinkle cloves and rosemary over chicken. Add orange juice and cover with aluminum foil. Cook chicken 40-50 minutes at 375 degrees with breast side down. Flip chicken and cook an additional 20 minutes until skin is golden brown.
Notes: The chicken will give off a lot of sauce. This can be served with the roasted garlics on a platter- family style.
