Roasted Winter Squash With Spinach & Gorgonzola

Roasting squash brings out the sweetness, and in this recipe it is offset by tangy cheese. The nice part about using a strong blue cheese is that you don't need much to pack a flavor punch!

Ingredients:

4 Whole Winter Squash, your favorite variety
3 Tbsp Garlic-infused Olive Oil
Salt & Ground Black Pepper, to taste
9 oz Baby Spinach Leaves, washed
7 oz Gorgonzola Cheese, crumbled or sliced

Directions:

Pre-heat oven to 375 degrees. Cut the tops off the squash, and scoop out and discard the seeds. Place the squash, cut side up, in a roasting pan and drizzle with 2 tablespoons of the oil. Season with salt and pepper and bake for 30-40 minutes, or until tender.

Heat the remaining oil in a large frying pan and add the spinach leaves. Cook over a medium heat for 2-3 minutes, until the leaves are just wilted. Season with salt and pepper and divide between the squash halves.

Top with the Gorgonzola cheese and return to the oven for 10 minutes, or until the cheese is melted. Season with ground black pepper and serve.
