Salad of Three Beans

Three bean salad with a light vinaigrette of lemon juice and red wine vinegar--loaded with fiber.
 

Ingredients

  • 15.5 oz can red beans, drained and rinsed
  • 15.5 oz can garbanzo beans, drained and rinsed
  • 15.5 oz can cannellini beans, drained and rinsed
  • 1 red onion, chopped
  • 1 bunch scallions, chopped
  • 2 stalks celery, chopped
  • Handful fresh basil, chopped
  • Kosher salt and fresh ground pepper to taste
  • 6 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 6 Tablespoons red wine vinegar

Method

Mix all ingredients together and season with salt and pepper to taste.

 

Notes: This tastes better after flavors have a chance to blend for an hour or more. For a little variety and more nutrition, you can also add in 2 cups chopped baby spinach.
