Salmon Tacos with Chipotle Cole Slaw

Salmon, loaded with omega-3 fatty acid, is considered one of the healthiest fish--who knew health food could be delicious too!
Ingredients
- Salmon:
- 4 salmon filets, 4 oz each
- 2 tsp salt
- 4 tsp paprika
- 2 tsp cumin
- 2 tsp chili powder
- 1/2 tsp black pepper
- 1 sweet Vidalia onion, thinly sliced
- 5 cloves garlic, minced
- 15 oz can diced tomatoes with mild green chilis
- 3-4 tablespoons canola oil
- Cole Slaw and Dressing:
- 1/2 medium head cabbage, shredded
- 1/4 small head red cabbage, shredded
- 1 red bell pepper, julienned
- 1/4 cup shredded carrots
- 1/2 cup mayonnaise
- Juice of 1/2 small lemon
- 3 tablespoons chipotle salsa
- 1 tablespoon ground coffee
- 1 tsp ground cumin
- 1 tsp dried cilantro
- 1 tsp sugar

Cole Slaw Dressing: In a food processor, combine mayonnaise, lemon, chipotle salsa, coffee, cumin, cilantro and sugar then blend until smooth. Reserve a few tablespoons to drizzle on salmon. Toss remainder with shredded cabbage, carrots and red bell pepper. Let chill in refrigerator 1 hour before serving. Salmon: Cut salmon into bite sized chunks and toss with salt, chili powder, cumin, paprika and pepper. In a nonstick skillet, heat canola oil on low medium heat. Once oil is hot, pan sear salmon until just cooked through, 5-7 minutes. Remove salmon from skillet and add sliced onion, garlic and tomatoes. Saute until onions are soft. Add salmon and toss to mix. Fill soft or hard taco shells with salmon then top with tomatoes and onions. Drizzle a little reserved cole slaw dressing on salmon and top with chipotle cole slaw.
