In a colander, add peas, hominy and corn. Rinse well with water and drain, then pour into a larger bowl. Add diced tomatoes to colander and drain well. Add all remaining ingredients to large bowl and mix gently. Refrigerate until serving--the longer the better.
Enjoy as a side dish or as a meal. I have eaten it with cornbread, rice or tortilla chips or by itself. If Valentine's, use only red bell pepper or Christmas you can use red and green. You can replace the Italian herbs, olive oil and vinegar with a large bottle of Italian herbed oil and vinegar dressing.
