Sliced Ham with Roasted Vegetables


Ham slices are heated with roasted vegetables (potatoes, carrots, turnip and onion), then drizzled with a saucy mixture of orange juice, horseradish, and brown sugar to create a healthy main dish.



Ingredients:

  • 6 medium potatoes, peeled and cubed  
  • 5 medium carrots, julienned  
  • 1 medium turnip, peeled and cubed  
  • 1 large onion, cut into thin wedges  
  • 6 slices (4 to 6 oz. each) fully cooked ham, halved  
  • 1/4 cup frozen orange juice concentrate  
  • 2 Tbsp. brown sugar  
  • 1 tsp. prepared horseradish  
  • 1 tsp. grated orange peel

Method

Line two 15x10x1-inch baking pans with foil and coat with nonstick cooking spray. Add potatoes, carrots, turnip and onion; generously coat with nonstick cooking spray. Bake, uncovered, at 425 degrees for 25-30 minutes or until tender. Arrange ham slices over the vegetables. In a bowl, combine remaining ingredients. Spoon over ham and vegetables. Cover and bake 10 minutes longer or until the ham is heated through.
