Smoked Mountain Chicken

Small chicken breasts are brushed with liquid smoke and grilled. They are served with a homemade bar-be-cue sauce.
Ingredients
- 4, 4 oz. chicken breast halves, without skin
- 1 tablespoon liquid smoke flavoring
- Sauce:
- 8 fluid ounces tomato puree
- 3 drops hot pepper sauce
- 2 tablespoons brown sugar
- 1 tablespoon vinegar
- 1/8 teaspoon cloves, ground
- 1/8 teaspoon allspice, ground
- 1/8 teaspoon cinnamon, ground
- 1 tablespoon onion, minced
- 1 tablespoon canola oil
- Garnishes:
- 3 green onion
- 1 medium tomato
- 4 ounces nonfat cheddar cheese, low sodium
- 1 tablespoon bacon bits

Method
1. Marinate chicken breasts coated with liquid smoke for 1 hour. Grill chicken over medium coals until juices run clear. 2. In small saucepan combine all sauce ingredients and bring to a boil. Simmer 15 minutes. 3. While chicken is grilling, chopped green onions and tomatoes to a fine dice and grate cheddar cheese. 4. To plate, place the warm sauce in a squeeze bottle and create design on the plate, place chicken in the center top with chopped vegetables & garnishes (tomato, green onions, cheese, and bacon bits)
Notes: Serving notes: I usually serve this with roasted potatoes, oregano-garlic green beans, and low-sodium yeast rolls.
