Smoky Hot Turkey Tenderloin Quick-Fry

Turkey tenderloins are stir-fried with onion and peppers. Mayonnaise, sour cream and chipotle peppers are added, and it's served on warm pita rounds.
Ingredients
- 1 Tablespoon vegetable oil
- 1 1/4 pounds turkey tenderloins, sliced in 1/4-inch thick strips
- 1/2 teaspoon coarse kosher salt
- 1 medium red onion, sliced in thin wedges
- 1 small green bell pepper, sliced in thin strips
- 1 small red bell pepper, sliced in thin strips
- 1/4 cup mild giardiniera (or other vegetable) relish, minced*
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 Tablespoon chipotle peppers in adobo sauce, finely minced
- 6 pita bread rounds, warmed
- 1/4 cup fresh cilantro, chopped

Method
Heat a large skillet or wok over high heat; add oil, turkey strips and kosher salt. Stir-fry until cooked through, about 5 to 6 minutes. Remove turkey from pan, reserving oil. Add onion, green pepper and red pepper. Stir-fry until crisp-tender, about 3-4 minutes; add relish; remove from heat. In a small bowl combine mayonnaise, sour cream and minced chipotle. Add this mixture to turkey and stir until combined. Serve on pita rounds; garnish with cilantro.
Notes: If your favorite giardiniera brand doesn't come minced you can easily mince it in a food processor
