Spanich Rice

Red pepper flakes and tomatoes and flavor and spice to traditional Spanish style rice.
Ingredients
- 1 yellow onion, chopped
- 1 16 oz can stewed tomatoes
- 1 3/4 cups chicken stock
- 1 cup dried basmati rice
- 3 cloves garlic, minced
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1 tbsp chili powder
- 1 tbsp paprika
- 2 tsp cumin
- 1 tsp red pepper flakes
- 2 tbsp butter
- 2 tbsp olive oil

Method
In a sauce pan, bring chicken stock to a boil. Add rice, cover, lower heat to low and simmer 20 minutes. Drain stewed tomatoes reserving juice. Chop tomatoes and set aside. In a large saute pan with high sides, add butter and olive oil then saute onions, 1 tsp kosher salt and pepper over medium heat for 5 minutes until onions are translucent. Add garlic and saute 1 minute. Add tomatoes, reserved tomato juice, 1 tsp kosher salt, chili powder, paprika, cumin and red pepper flakes. Reduce heat to low and simmer, stirring occasionally, for 5 minutes. After rice has cooked completely, add to tomato mixture. Stir, cover, and simmer 10 minutes. Serve hot.
