Spanish Rice with an Oriental Twist

A healthy, low fat dish made with ground turkey and brown rice. Soy and Worcestershire sauce add the oriental flavor.
Ingredients
- 1 lb ground turkey
- 1 can diced tomatoes with onion and green pepper
- 1 1/2 cup purchased vegetable juice
- 1/4 cup chopped onion
- 3 tbsp lite soy sauce
- 2 tsp Worcestershire sauce
- 1 tsp chicken bullion, optional
- Salt and pepper to taste
- 2 tbsp olive oil
- 3 cups cooked rice (see below)
- 1 cup brown rice
- 2 cups water
- 1 tsp chicken boullion, optional

Cooked rice instructions: Place ingredients in medium sauce pan and bring to boil, turn heat down and simmer 35 to 40 minutes until just done, but don't overcook. In large skillet add rest of olive oil and heat, and then add chopped onion and turkey. Add salt and pepper to taste and drizzle Worcestershire sauce and 1/2 of soy sauce on turkey. Cook until turkey is nearly cooked through. Add cooked rice, diced tomatoes, vegetable juice and remaining soy sauce to cooked turkey mixture. Let simmer uncovered for about 10 to 15 minutes.
