Spicy Pumpkin Butter

This spread for bread or biscuits is made in the microwave with canned pumpkin, brown and granulated sugars, and a blend of five spices.
 

Ingredients

  • 1/4 cup dark brown sugar
  • 2 tbsp white sugar
  • 1/4 cup water
  • 1/2 tsp allspice
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 1/2 cups canned pumpkin puree
 
Method

Combine both sugars, water, allspice, ginger, cloves, nutmeg and cinnamon in a 4-cup glass bowl. Microwave on high for 3 minutes, stirring occasionally; add pumpkin and microwave on high for 5 minutes, stirring once or twice. Let cool and refrigerate.

 

Notes: Keeps several weeks in refrigerator and can be frozen, too. Use as you would apple butter.
