This oven-baked rice recipe contains pineapple, bacon, sliced sweet onion, and seasonings, and sprinkles it all with cheddar cheese.



Ingredients:

  • One Large sweet (Vidalia) onion, sliced
  • 1 15 ounce can Pineapple Tidbits in Natural Juice
  • 6 slices bacon, cooked, drained and finely chopped  
  • 3 cups uncooked white rice (basmati preferred)
  • 5 Cups hot water
  • 2 tbsp. butter or margarine
  • 1 tsp. salt
  • 1 tsp. fresh minced garlic or 1/2 tsp garlic powder
  • 1/2 tsp. ground turmeric
  • 1/2 tsp. chopped fresh or ground ginger
  • 1/2 cup fresh chopped parsley (optional)
  • Pepper to taste
  • 1 1/2 cups shredded Medium Cheddar Cheese

Method

In a greased 9x13" pan, arrange onion slices on bottom. Sprinkle pineapple (with its juice) evenly on top of onions, followed by chopped bacon and uncooked rice. In a heat-safe mixing bowl combine hot water, butter or margarine, and remaining ingredients EXCEPT cheese. Set pan in oven and carefully pour water over mixture in pan. Cover pan tightly with foil; bake at 350 degrees for 40 minutes. Uncover, sprinkle cheese on top; bake, uncovered, another 15 minutes or until rice is tender.

Notes: This is a great side dish for a formal dinner or a casual potluck. The flavors slowly steam into the rice without overwhelming the palate! I prefer Basmati rice, as it has a flavor of its own that compliments and adds more dimension to the other ingredients.
