This sugar-free lemon cookie recipe is just right for the warm summer weather. The lemons give these cookies a refreshing flavor that will be welcome in any kitchen.

2 cups Almond Flour
½ tsp Baking Soda
⅛ tsp Sea Salt
¼ cup Coconut Oil
2 Tbsp Maple Syrup
1½ Tbsp Lemon Juice
1 Tbsp Lemon Zest


Preheat your oven to 350 degrees F. Use a food processor to combine almond flour, baking soda and salt until fine. Add the coconut oil, maple syrup, lemon juice and lemon zest until dough begins to form. Once the dough has formed, take out a baking sheet and scoop 2 tablespoons of dough to create balls. Carefully press down on each dough ball and then bake for around 7 minutes, which is when the cookies should be golden brown. Let the cookies cool for 30 minutes and then serve.
