Summer Couscous

This sweet and savory side dish has orange, raisins, carrots and snow peas. Serve this dish hot or cold.
Ingredients
- 2 cups couscous
- 2 cups low sodium chicken broth
- 2 tablespoons extra virgin olive oil1 tsp tumeric
- 1 tsp cumin1 tsp curry
- 1 tsp garlic powder
- Salt and pepper
- 1 cup white raisins
- 1 carrot
- 1 orange, cubed
- 3 to 4 scallions, thinly sliced
- 2 cups blanched snow peas
- 1 red bell pepper, chopped
- 2-3 ounces of sliced almonds

Method
Bring broth to a boil and add seasonings and raisins. In the mean time, shred the carrot, peel and chop orange, slice scallions and chop pepper. Combine the snow peas with the couscous in a large bowl then pour in the boiling broth. Stir and cover with a lid or plastic wrap for 10 minutes. Fluff with a fork then add in the pepper, carrots, scallions, almonds and orange, stir and enjoy.
