Sweet Chicken Stir Fry

Chicken, broccoli, onion and bell pepper in a sweet sauce with a few red pepper flakes to add a little spice.
 

Ingredients

  • 2/3 cup soy sauce
  • 1/4 cup packed brown sugar
  • 1 tbsp cornstarch
  • 2 garlic cloves
  • 1/4 tsp crushed red pepper flakes
  • 1 lb boneless chicken breasts cut into 1/8 inch strips
  • 2 cups uncooked instant rice
  • 1 medium green bell pepper
  • 1 small onion
  • 1 tsp sesame oil, divided
  • 2/3 cup carrots cut up
  • 2 cup broccoli

Method

Combine soy sauce, brown sugar and cornstarch, then whisk until blended. Add garlic and red pepper flakes to soy sauce mixture. Add chicken to soy sauce mixture and toss to coat. Cover and refrigerate 15 minutes to marinate. Meanwhile, cook rice according to package directions. Cut bell pepper into 1/4 inch strips and add carrots, onion and broccoli. Heat 1/2 tsp oil in a skillet over high heat until hot. Remove chicken from marinade, add to skillet, reserving marinade. Saute 1-2 minutes or until chicken is no longer pink. Remove from skillet and keep warm. Heat remaining 1/2 tsp oil in same skillet. Add bell pepper and onion. Saute 2-3 minutes or until vegetables are crisp tender. Return chicken to skillet and stir in reserved marinade. Bring to a boil, cook and stir 1 minute, or until sauce is thickened. Serve over rice.
