Sweet Potato Frittata

Turkey kielbasa sausage is sliced and layered with sliced sweet potato, and topped with beaten eggs to make this healthy frittata.
 

Ingredients

  • 1 tsp olive oil
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1 tsp minced jalapeno pepper
  • 4 oz lite or lean smoked turkey kielbasa sausage, sliced thin
  • 1 medium sweet potato, baked and sliced thin* (or 17 oz can whole yams, no sugar added, cut up)
  • 2 whole eggs
  • 4 egg whites
  • 1/4 tsp salt
  • 1/4 tsp pepper

Method

Spray a medium nonstick oven-proof skillet with nonstick cooking spray. Place over medium heat and add the onion, green pepper and jalapeno. Saute until tender, about 5 minutes. Add the sausage and cook for 2 minutes. Layer the potatoes slices or cut up yams over the sausage mixture. (Or roughly mash yams with a fork and spread over sausage mixture.) In a medium bowl beat the eggs, egg whites, salt & pepper, and pour over potatoes. Reduce heat to low and let the mixture cook until edges begin to set. Place the skillet under the broiler until the top of the mixture begins to brown and bubble and egg is set.

 

Notes: *Bake sweet potato in microwave on High setting for approximately 5 minutes for a medium potato. (Disregard this step if using canned yams.) This is quick, easy, filling and healthy to boot!
