This side dish uses quick-cooking long grain and wild rice mix, and adds celery, onion, dates and cashews for flavor, crunch and interest.
1. Heat large skillet on medium-high heat. When hot, add oil, celery and onion; saute 2-3 minutes or until crisp-tender.
2. Add contents of rice package to vegetables, including seasoning packet. Add water.
3. Bring to boil. Cover tightly, reduce heat and simmer until most of the liquid is absorbed (about 8-10 minutes.)
4. Turn off heat; add dates to vegetable/rice mixture. Cover and let sit for 5 minutes to allow dates to soften. Sprinkle with cashews just before serving.
Notes:
This dish is so quick and easy and yet looks quite elegant plated beside anything from filet mignon to meatloaf! The use of a boxed quick-cooking long grain and wild rice mix saves valuable time without sacrificing flavor.
