Tamarind Sweet and Sour Shrimp

Fresh shrimp is cooked with a tamarind sauce and topped with fried shallots and red chilies. Serve over rice or noodles for a tasty meal.
 

Ingredients

  • 1 pound shrimp, cleaned, shelled and deveined
  • 3 tbsp sliced shallot, fried crisp
  • 5 dried red chilies, fried crisp
  • 2 tsp salt
  • 2 tbsp fish sauce
  • 1/3 cup palm sugar
  • 2/3 cup tamarind juice
  • 3 tbsp vegetable oil
 
Method

Mix tamarind juice, palm sugar, fish sauce and salt. Place in a pan and stir over low heat until it becomes a syrup. Remove from heat and set aside. Heat oil in a pan, or wok, over high heat. Add shrimp and stir fry until shrimp starts to become pink. Pour tamarind sauce over mixture, stirring well. Arrange on a serving dish, sprinkle shallots and chilies over top and garnish as you like before serving.
