Touchdown Turkey Chili

Ground turkey gives this chili a healthy start. All of the seasonings, fire roasted tomatoes, dark beer and chipotle peppers add the perfect flavor.
 

Ingredients

  • 1 1/2 lbs ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 roma tomatoes, seeded and chopped
  • 2 cloves garlic, chopped
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 1 can garbanzo beans, drained
  • 1 can fire roasted tomatoes
  • 1 can corn, drained
  • 1 can chipotle peppers in adobo
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon cumin
  • 1 bottle dark beer
  • Salt and pepper to taste
  • Garnishes:
  • Chopped red onion
  • Shredded cheddar cheese
  • Sour cream
  • Lime

Method

Cook ground turkey in a skillet just until pink is gone. Season with salt and pepper then transfer turkey to a crock pot. In same pan, heat olive oil, add onion and green pepper. Season with salt and pepper, cook until tender, add garlic and tomatoes and cook just a few minutes until tomatoes are soft. Add mixture to crock pot with all beans and fire roasted tomatoes. Add Worcestershire sauce, cumin and 1 chopped chipotle pepper. Add half of beer and season with salt and pepper. Let simmer in crock pot on high 15-20 minutes. Add corn and check seasonings. Keep warm on low heat and let guests garnish with shredded cheddar cheese, sour cream, chopped red onion and wedges of lime to squeeze on top.
