Method
Chop the onion and mushrooms and saute in a bit of olive oil. Set aside to cool. Toast the bread and grind into bread crumbs, or use packaged crumbs. Combine all the remaining ingredients except the flour and add the cooled onions and mushrooms. Mix thoroughly. Place the flour in a shallow dish and, working with a large spoon and pancake turner, place a portion of the mixture into the flour, coat both sides, move to the foil, flatten it, and wrap it up. There will be enough for about 8 burgers, which can then be frozen until needed. It takes less than an hour to prepare these. When ready to use, thaw them slightly and saute in olive oil. To prepare the cabbage, slice or shred as much as is needed and steam it. (A strainer can be placed over a saucepan and covered to serve as a steamer.) After the burgers are cooked and nicely browned, remove them from the pan and briefly saute the cabbage in the skillet, adding salt and pepper to taste. Serve burgers on the cabbage.
Notes: Serve with boiled or baked potatoes and tomato ketchup.
Number of Servings: 8
