Turkey Tsimmes with Apricots and Red Wine

Turkey cubes and dried apricot halves are cooked with onion, carrot and garlic, in a lightly thickened sauce of red wine, broth, tomato paste and cinnamon.
 

Ingredients

  • 1 tablespoon vegetable oil
  • 2 pounds boneless turkey fillets, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 large carrots, peeled and diced
  • 2 garlic cloves, chopped
  • 1 tablespoon all-purpose flour
  • 1 cup dry red wine
  • 1 tablespoon tomato paste
  • 2/3 cup chicken or turkey broth
  • 1/2 teaspoon ground cinnamon
  • 1 bay leaf
  • 1/2 cup dried apricots
  • 1/2 teaspoon sugar or to taste
  • Salt and freshly ground black pepper

Method

Heat the oil in a Dutch oven over medium heat. Add turkey and saute lightly in 2 batches, removing each batch as it browns. Add the onion and carrots; saute about 5 minutes. Add the garlic; saute over low heat for a few seconds. Add flour; cook and stir 30 seconds. Add the wine, stirring until smooth, scraping the bottom of the pan. Bring to a simmer. Stir in tomato paste. Add the broth, cinnamon, bay leaf and apricots. Mix well. Return the turkey to the pan. Cover and cook over low heat, stirring occasionally, about 30 minutes or until the turkey pieces are tender. Remove the bay leaf. Skim as much fat as possible from the sauce. Add the sugar to the sauce. Taste sauce and adjust seasoning, adding salt, pepper or more sugar, if needed.
