Vegetarian Biscuits and Gravy

This brunch recipe uses meat-free sausage patties, cut into cubes and combined with vegetables, herbs, & a dairy-free thickened sauce served over biscuits.
 

Ingredients

  • 3 Gardenburger sausage patties, chopped into 1/2-inch cubes
  • 1/2 large onion, chopped fine
  • 3 cloves garlic, pressed
  • 4-5 button mushrooms, minced
  • 1 1/2 cups vegetable broth or stock
  • 1 cup plain almond milk, or soy or rice milk
  • 1 to 2 tbsp cornstarch, dissolved in 1/2 cup cold water
  • 1 to 2 tsp dried sage
  • 1 to 2 tsp chopped fresh rosemary
  • 1 to 2 tbsp nutritional yeast flakes
  • Soy sauce (wheat-free tamari) to taste, optional
  • Olive oil cooking spray
  • Black pepper
  • Fresh chopped parsley, for garnish
  • 4 fresh baked biscuits, split

Method

In a cast iron pan, saute onion, garlic, and mushrooms in a little olive oil until onions are soft. Remove from pan and set aside. In same pan, saute sausage cubes until they begin to brown and some of brown bits begin to stick to the bottom of pan. Add onion mixture back, and then add broth. Bring to a simmer, scraping up browned bits from pan. Add half of your desired amount of each herb, yeast, and pepper; let simmer for a minute, and then taste it. For more flavor, add remaining herbs, yeast, and pepper. Add a teaspoon of soy sauce for even more taste. Stir in almond milk. Adjust seasonings. Bring to a low simmer, and stir in cornstarch liquid. Stir constantly until thickened. Serve over warm biscuits and top with a final sprinkle of fresh parsley for color.
