Vegetarian BLT and Avocado Sandwich

Vegetarian "bacon" made with soy protein is used along with romaine, tomatoes, plus avocado in this meatless variation of the classic sandwich.
Ingredients
- 4 strips soy bacon
- 2 slices multigrain bread
- 1 tbsp (lowfat) mayonnaise
- 4 romaine leaves
- 2 slices tomato
- 3 slices avocado

Pan fry soy bacon according to package directions; set aside. In same pan, lightly coated with nonstick spray, place the slices of bread; toast on both sides until golden brown. Remove toast from pan. Spread mayonnaise on both slices of toast. Place 2 lettuce leaves on one piece of toast. Add bacon, tomatoes, avocado slices, and the remainder of romaine lettuce. Add second piece of toast on top. Cut sandwich in half to serve.
