Versatile Grilled or Broiled Veggie Mix

Ordinary vegetables become extraordinary when grilled--especially when you add just the right seasoning.
Ingredients
- Zucchini
- Yellow crook neck squash
- Onion
- Red, green, or yellow bell peppers
- Potatoes, optional
- Seasonings (to taste):
- Seasoned salt
- Smoked paprika
- Garlic powder
- Italian seasoning

Method
For broiling, chop all vegetables into bite sized chunks. If using a grill basket or pan, size pieces accordingly. Spray with cooking spray and season with choice of seasonings. Grill or broil until vegetables have reached desired tenderness.
