Artichokes, mushrooms, garlic, onion and bell pepper are sauteed with cream cheese and added to a hollowed out loaf of bread and baked for this appetizer.
 

Ingredients

  • 1 loaf uncut bread
  • 1 can artichokes in water
  • 1 tablespoon minced garlic
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell pepper
  • 1/2 cup mushrooms
  • 2 tablespoons extra virgin olive oil
  • 12 oz softened cream cheese
  • 1/2 cup cheese

Method

Cut off top of loaf and scoop out the inside, leaving just the shell. In a sauce pan, add olive oil and heat on high. Add all ingredients, except 1/2 cup of cheese, to olive oil and saute. When all ingredients are translucent, remove from heat. Add heated mixture into hollowed out loaf and sprinkle with cheese. Place loaf in oven for 15 minutes or until cheese has melted and browned. Remove from oven and let stand 15 minutes before cutting or serving.
